Since making my mom’s banana bread recipe I got more confidence when it comes to baking sweets. I wanted to make banana bread again but this time around I decided to bake them into little cupcakes. I also added some chocolate chips on top and they came out great. Once again, our apartment smelled like home and it felt like my mom was visiting. I love the fact that now I can cook some dishes that let me travel from our own apartment.

I really recommend making these as muffins, or as a whole bread. Either way is delicious. I mean, it’s my mom’s recipe!

Inspiration Nook Cravings – Mom’s Banana Bread

I’ve been eating banana bread my entire life. Thanks to my awesome mom and her awesome recipe. Every time she makes it she has to make two at a time, because one, well is just not enough. I was craving it the other day. Being far away from home made me want to give it a try. I have to admit, losing my “kitchenphobia” has been the best thing thats happened to me all year. So….I called my mom, got her recipe and said to myself: “Take a deep breath and try to bake something right for once!”

At the end, I couldn’t believe my eyes. The house smelled like home. It was like my mom had come to visit us. For the first time I had baked something right. It was all I ever wanted. It was fluffy (I love this word), moist and simply delicious! My boyfriend was thrilled too! I guess all I had to do was give one of my mom’s recipes a try for this miracle. Why did I wait this long?

The recipe is very easy to follow and make. My mom is super excited I will be sharing it. So here you go, let’s call it what it is:

Mom’s Banana Bread

3 Very ripe bananas, mashed!

2 Eggs

1 & 3/4 cups of all-purpose flour

2/3 cup of Sugar (brown sugar recommended)

1/2 stick of butter.

2 teaspoons of baking powder

1/4 teaspoon of baking soda

1/4 teaspoon of salt

Optional  – a little splash of liquor, I used rum.

Lightly grease a 9″ x 5″ x 2 3/4″ loaf pan with butter.  Lightly dust with flour.

  • First in a little bowl you need to separate the egg whites and blend them until frothy. (Keep yolks for next step)
  • In a big bowl mix the sugar, yolks and melted butter.
  • Add bananas slowly to mix taking turns with the flour.
  • Add all the rest of the ingredients and finally those egg whites you mixed first.
  • Preheat the oven to˚350.
  • Pour batter into pan and bake until golden brown and a toothpick inserted into the middle comes out clean, about 60-65 minutes.
  • Allow to cool before slicing. (Or until your boyfriend can’t wait any longer to eat it)

Daily Inspiration – Zucchini Banana Chocolate Chip Bread

One of the very first recipes I ever shared here on the blog was my mom’s banana bread. When I made it into muffins, adding chocolate chips, they went viral on Pinterest. This time around I’m adding one more ingredient… zucchini! I simply added a cup of shredded zucchini to the mix and that’s how this zucchini banana chocolate chip bread was born. The end result was amazing!!! Our house smelled incredible too HA! This family recipe will always make me travel back in time. It has become a favorite in our house over the past few years of me making it. As cheesy as it might be, I’m looking forward to passing it along to our future kids one day so it can maintain its family tradition. Give it a try! Have you ever had zucchini bread? Daily Inspiration – Banana Chocolate Coconut Bundt Cake!

I’ve been on a banana kick lately haven’t I? First zucchini-chocolate chip banana bread and now this. This my friends was a creation sent to me from the baking gods! HA! I was telling the mister how I wanted to try making a banana coconut cake and he suggested to not forget chocolate chips (Yes, I married the right guy HA!). As I was mixing my ingredients I decided to add some cocoa powder to take it up a notch on the chocolate flavor, not really sure if it was gonna work. Well, the cake turned out incredible. I’m still patting myself on the back. I also made a “rum” glaze to go with it since I thought, coconut and rum go together right? I always use a splash of rum when mixing my banana bread ingredients so I thought why not add it to the glaze too HA! Anyways, that’s how this Banana Chocolate Coconut Bundt Cake was born. I also used some mini bundt pans for the first time and I am in love. Mini versions of things are just too cute arent’ they? The full recipe for this bundt cake is below so no need to keep referencing this old banana bread with ugly photos. God, I always laugh at my old my food photography, those were the days HA!

Banana Chocolate Coconut Bundt Cake

3 ripe bananas, mashed

2 Eggs

1 & 3/4 cups of all-purpose flour

2/3 cup of Sugar (brown sugar recommended)

1/2 stick of butter

2 teaspoons of baking powder

1/4 teaspoon of baking soda

1/4 teaspoon of salt

1/2 cup of coconut flakes

1 tbsp of cocoa powder

1/3 cup of chocolate chips (or many as you wish)

*Optional  – a little splash of rum.

For the Rum glaze: Mix a cup of powdered sugar, two tbsp of milk and a splash (or two) of rum!

To kick things off preheat your oven to˚350. Lightly grease and flour a bundt pan. In a big bowl mix the sugar, eggs and melted butter. Add bananas slowly to the mix taking turns with the flour. Add the rest of the ingredients with the coconut flakes and chocolate chips being your last, fold these last two lightly into your batter. Pour batter into mold and bake until golden brown and a toothpick inserted into the middle comes out clean, about 30-40 minutes. Allow to cool before adding glaze. For the glaze, mix your powdered sugar, milk and rum well until a smooth consistency is reached. You can always add more powdered sugar or milk depending on how rich or thick you want it. Once your cake is cool, add your glaze on top with a handful of coconut flakes! That’s it! Easy right? I so love how versatile this family recipe has become. Will you give it a shot? Daily Inspiration – Happy First Blog Anniversary To Me!

Yes, you read that right. Today marks the first year of this little nook coming to you live from L.A. Well, not live but you get the point, HAHA. I still can’t believe it has been a full year since I posted this little friend (here). Like my Dad always says: “Time flies when you’re having fun”. I was in shock when I found out I’ve reached a total of 25,865 people, from 137 different countries… Yes I counted! (Thanks Google Analytics). I know it’s not much compared to some of my favorite blogs, but I don’t care. I’m happy to have at least one reader. So THANK YOU from the bottom of my crazy heart for reading my little blog.
