I’ve been eating banana bread my entire life. Thanks to my awesome mom and her awesome recipe. Every time she makes it she has to make two at a time, because one, well is just not enough. I was craving it the other day. Being far away from home made me want to give it a try. I have to admit, losing my “kitchenphobia” has been the best thing thats happened to me all year. So….I called my mom, got her recipe and said to myself: “Take a deep breath and try to bake something right for once!”
At the end, I couldn’t believe my eyes. The house smelled like home. It was like my mom had come to visit us. For the first time I had baked something right. It was all I ever wanted. It was fluffy (I love this word), moist and simply delicious! My boyfriend was thrilled too! I guess all I had to do was give one of my mom’s recipes a try for this miracle. Why did I wait this long?
The recipe is very easy to follow and make. My mom is super excited I will be sharing it. So here you go, let’s call it what it is:
Mom’s Banana Bread
3 Very ripe bananas, mashed!
2 Eggs
1 & 3/4 cups of all-purpose flour
2/3 cup of Sugar (brown sugar recommended)
1/2 stick of butter.
2 teaspoons of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
Optional – a little splash of liquor, I used rum.
Lightly grease a 9″ x 5″ x 2 3/4″ loaf pan with butter. Lightly dust with flour.
At the end it should look something like this…
You know that if I was able to do it you can too! Give it a shot! You can even add some chocolate chips, pecans or anything else for your taste!

My mom used to make great banana bread and I could never duplicate it…..going to try one last time with this recipe!

I curiously decided to try out Blonde Coconut Palm Sugar and splashed the batter with Kraken Rum. It turned out amazing! Thank you for sharing this recipe! :D
