Inspiration Nook Cravings – Pumpkin Muffins!

I think I will call this week Pumpkin Week here at Inspiration Nook!, every post has involved pumpkins one way or another. For today’s cravings we have Pumpkin muffins made with only 2 ingredients. Yes, you read it right, just 2 ingredients…

With just a spice cake mix and a can of pumpkin puré you can create the most amazing, moist and fluffy muffins you will ever have. I found this recipe on Pinterest (here) and knew I had to give it a shot. I also ran into it on Bower Power and Katie’s sweet post convinced me even more.  For not being a baker making these bad boys made me feel like one. Our house had that special pumpkin scent that made me love Fall even more. Well, enough talking, just  check them out!

Daily Inspiration – Black Bean Soup

Well folks, I’ve officially completed another seasonal bucket list. I know for some of you a black bean soup doesn’t scream Fall, but for me, any soup counts on a chilly day HA! I made this after the first snowfall here in Madison and it was just what I needed to stay warm inside, besides a blanket or two. This was the easiest soup I’ve ever made and also the tastiest. Thanks to the great recipe by Honey & Birch. It only calls for three ingredients plus whatever garnishes you wish. I went with feta cheese and cilantro. You can never go wrong with cilantro + black beans. Definitely keeping this recipe on rotation at our home. What is your favorite soup to make on a chilly day? Also, are you excited for Winter? Daily Inspiration – Brat Bites

Well folks the NFL’s kickoff is finally here and as you can tell from ALL my latest posts (here /here /here) I am p-r-e-t-t-y excited to have football back in our lives. Last week I had my fantasy draft so I am pumped and ready to go for tonight! For our fantasy draft, my friend Dani made these delicious brat bites and she totally inspired me to create these using my teams colors. Yes, just like I matched my caprese kabobs to the Wisconsin Badgers I am matching these brats bites to my beloved Green Bay Packers. Don’t judge me. Besides, I found some awesome Party Pail Packer’s stuff and they were calling my name. Hey NFL season-  I’ve never been more ready for you! HA! Back to the recipe, the best thing about it, you can make them with leftovers from any BBQ party. Wanna learn how? Take a look!

Toothpicks

Start by preheating your oven to 350 degrees. Slice your brats & jalapeño. Place a little cheese on top of each brat piece, using your toothpick place a jalapeño slice on top and through the meat. Set them all on a tray and in the oven they go for about 15 minutes to melt the cheese and reheat your meat. Once ready, I served both ranch & sweet spicy honey mustard for dipping. Votes were divided in our house on what was best so I will leave it up to you to try it.

Daily Inspiration – Sweet Potato Spinach Pomegranate Salad

I’ve been on a salad kick lately. I guess it’s what happens during Summer. I had pomegranate seeds for the first time a few weeks ago and I am officially hooked. There are a million ways to have them (just look on Pinterest). I’ve been having this sweet potato spinach pomegranate salad multiple times a week. It’s perfect for either lunch or dinner. There is no meat in it and I don’t miss it one bit. The sweet potatoes are the main star of this dish, with the pomegranate seeds taking it to the next level. Of course adding goat cheese makes it a five star salad in my book HA! Then comes the dressing! Ladies and gents this Panera dressing will rock your socks. Ever since my friend Dani introduced me to it, I simply cannot stop adding it to my salads. The tangerine flavor in my opinion complements the ingredients of this salad perfectly. They were totally meant to be together! To be clear, this is not a sponsored post by Panera. If you were to ask them who I am they’d have no clue. Maybe after this post they might HA! I just really love this dressing and to me having a good dressing makes any salad stand out more. Bad dressings ruin dishes for me so I’m just more than happy to share this match made in heaven with you guys HA! Are you ready to make this? Let’s go!

Sweet Potato Spinach Pomegranate Salad

(Makes 2 servings)

3 cups of Spinach

1 medium sweet potato, boiled and cut into cubes

3 tablespoons goat cheese (or as much as you wish HA!)

2 tablespoons pomegranate seeds

1/2 tablespoon of poppy-seeds

Panera’s Tangerine Honey salad dressing

Start by peeling and cutting your sweet potato into cubes. Boil it for approximately 15-20 minutes until soft. Strain and sprinkle with salt and pepper to taste. In a bowl/plate place your spinach and top it with your sweet potatoes. Add the pomegranate seeds with little pieces of goat cheese on top. Drizzle with dressing and finish with poppy-seeds for a little crunch. That’s it! I apologize in advance if you become obsessed with it like I am. Maybe we can start a salad support group? Daily Inspiration – Key lime Pie

I  must confess, this is my favorite kind of pie. I absolutely love how easy it is to make at home. This key lime pie recipe uses only 5 ingredients! How awesome is that? Plus it takes no time to put together. I even made a little video for fun to show you. So grab a cup of coffee, sit back and enjoy the show.

Key Lime Pie

14 oz. can of sweetened condensed milk

9″ graham cracker pie crust

1/2 cup fresh lime juice

2 eggs (separate your yolks & whites)

Start by preheating your oven to 350 degrees. Separate your egg yolks and place whites in a large bowl and set aside for later. In a blender mix your milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350º for 15 minutes. Once pie is ready, let it cool for about 10 minutes then place it in the fridge. Refrigerate your pie for an hour or so. Just before serving, it’s time for you meringue! Beat the egg whites with an electric mixer on medium speed until soft. Add 2 tablespoons of sugar one by one until combined (Add a splash of vanilla extract if you wish too). Decorate your pie with your meringue and garnish with pretty lime slices. That’s it!
