Inspiration Nook Cravings – Chicken Salad with Grapes & Dill!

My mom talked about this salad for months. I live 3000 miles away. It wasn’t easy. I couldn’t take it anymore, I had to try it. I asked her for the recipe. I made it. Two words: LOVED IT! The sweetness of the grapes mixed with the chicken is to die for. If you need a light lunch to pack for work, or a nice side to bring to a party, or are simply looking for a new favorite salad, you must make it. Enjoy!

Mom’s Chicken Salad with Grapes & Dill

Ingredients

  •   3 Chicken breasts (boiled and shredded)
  •   2 Green onions (Chopped)
  •   1/4 Pound of seedless grapes. (Sliced)
  •   1/2 Cup of mayonnaise.
  •   Dill weed (as my mom said: a lot but not too much!)

Mix all the ingredients in a bowl and serve.  You can put it in the fridge for like 20 minutes before serving, it’s great a little cold. The dill I would recommend to use to your taste. I like to see enough dill in the salad that balances the chicken. It’s up to you!

I ate it with crackers, but after some thinking next time I’m making myself a sandwich with some good whole wheat bread!I also found out some people add celery, or even walnuts to it. I will definitely will be playing with some variations.
