Daily Inspiration – Greek Spinach Pie

I was in the mood for a savory late breakfast and this Greek Spinach Pie was the best thing I could’ve made. I mean, nothing can go wrong when using feta and cottage cheese. I’ve never worked with phyllo dough before, I was surprised at how easy it was. I ended up getting inspired by this recipe but totally skipped the freezing step, plus used fresh spinach instead HA! Sometimes you just gotta improvise. My greek spinach pie turned out delicious and I cannot wait to try out some more recipes using phyllo. Have you used phyllo dough before?
