Hello there friends, it’s been a long time huh? Hope this post finds you all well and happy! I’ve been pretty busy lately with work and wedding planning. I’m so looking forward to those extra hours of sunlight thanks to daylight savings. This always inspires me to get more photos done for this little internet corner of mine. Or should I say ours? Anyways, I wanted to share these amazing black bean burgers I made yesterday. I had my first back in the Midwest during the holidays and I was immediately hooked. I came across some pins on Pinterest so I decided to finally make them at home. I had to convince the mister to have them since there isn’t any meat in them. He sure loves “real” burgers! Well, the fact that he finished his first was a huge win in my book! HA! I followed these two different recipes (here & here). I just felt like mixing some ingredients we both liked to be safe and they turned out amazing!!!! I used spicy avocado, pico de gallo and a little bit of feta cheese as our toppings. They were just delicious! Give it a shot if you feel like having a “healthy” burger. Have you ever had a black bean burger?

Last week I had a quick day trip to San Francisco for work. Cannot wait to go back for an actual stay. Northern California sure feels like a different state. San Francisco I’ll be back soon. You were too pretty not to see you again!

Ending up in the middle of the desert right before sunrise didn’t sound like a good idea. The location made it a lot sweeter. Club Ed is definitely worth the drive from Los Angeles. Not sure what it is, I just love being out in the desert, even when the reason is just work. Are you a desert lover too? Happy Monday friends!
