Daily Inspiration – Blood Orange Cinnamon Rolls!

Well well well, looks like I have yet another Blood Orange recipe (if you’re keeping track this is number three HA!) First was the cake, then the muffins, now I bring to you Blood Orange Cinnamon Rolls, with chocolate chips I might add! I’ve had this crescent rolls tube in the fridge that I’ve been meaning to use for these spinach rolls. I kept forgetting to make them on the weekend, when the mister and I have breakfast together. I came across this great recipe by Crazy for Crust on Pinterest (of course) and knew immediately that I needed to adapt it to my new favorite fruit. These bad boys turned out amazing. The mister loves his cinnamon rolls, every time we are at an airport he looks for the first “Cinnabon” spot, so needless to say he was happy with these. When following the recipe, simply substitute the “orange” with “blood orange” during all instructions. I love how easy it was to make these and who knew there were so many easy recipes using a crescent roll tube? HA! Am I too late to this game? Happy baking friends!

Daily Inspiration – Blood Orange Blueberry Muffins

Ever since trying my very first blood orange a few months back I really can’t stop. It has become my favorite fruit and I absolutely love baking with it. All thanks to this cake. I made it again for somebody special last week and it was a total hit. Then it dawned on me, why not turn it into muffins and add blueberries?!? HA! Because I needed another reason to bake right? I wonder once Spring comes around if I’m gonna be baking this much. Any-who, once again I followed this recipe, only this time I added a handful of blueberries to my mix. I also used a muffin tin instead of a loaf pan. Baking time was only 35 minutes since it bakes way faster as muffins. They turned out a-m-a-z-i-n-g! The mister loved them too so it was a total win in this house. Now excuse me while I go have another one and pretend it’s my cardio for the day! Are you in love with blood oranges too? Daily Inspiration – Blood Orange Cake!

Oh my, oh my! If you follow us on Instagram you probably know I tried my very first blood orange last week (yes, super late to the game, I know!) and my life has changed forever! Too dramatic? Maybe. The truth is, I already bought a second bag just because I wanted to keep eating them and bake with them at the same time HA! That’s where my obsession is right now. As always one of my best friends introduced me to a ton of recipes so that’s when my mind was really blown. If you didn’t catch that, when I say “one of my best friends” I’m referring to Pinterest HA! Long story short, this cake by Tide & Thyme called for Greek yogurt instead of butter so I was all in. This was the first time I was making a pound cake from scratch so I was a little nervous but the end result was just incredible! I had to tell the mister to leave enough cake for me to take pictures in the morning. True story. Are you a fan of blood oranges? Have you made any recipes? Please do tell! Can you tell I like them? Daily Inspiration – Blueberry Lemon Muffins!

I woke up wanting to bake something. This usually happens during a rainy day. To me there is nothing better than mixing your ingredients up while looking out the window and listening to the rain. Can you picture it? You know it’s the best. I had blueberries and lemons in our fridge so it was easy to decide which kind of muffins to make while looking in there HA! Last time I made blueberry muffins they were these blood orange ones and they were pretty amazing. We are big fans of blueberry muffins in this house apparently. This new recipe is pretty basic so grab some berries and let’s do this! Oh, and I made a video to celebrate the occasion. You might start seeing these pop up every now and then. Hope you like them!

Blueberry Lemon Muffins

(This recipe makes 12)

2 cups of flour

2 eggs

2/3 cups of sugar

1/4 cup of milk

1 stick of butter

1 teaspoon of baking powder

1 tsp of vanilla

1/2 tablespoon of lemon zest

1 tbsp of lemon juice

1 1/2 cups of blueberries (or much as you wish)

Start by preheating your oven to 350 degrees. Spray a muffin pan with baking spray and set aside. In a bowl mix your sugar, eggs and soft butter. Add the flour slowly to the mix followed by the baking powder, milk, vanilla, lemon juice and lemon zest. Lastly, fold the blueberries into your batter. Pour batter into your muffin pan using an ice cream scoop (this will help spread the mix evenly throughout), bake for 20-25 minutes or until golden brown and a toothpick inserted into the middle comes out clean.
